Boil water. Add in oats, apples (reserve a few for topping),salt, apple pie spice. Cook 1 minute stirring occasionally.
Melt peanut butter in microwave. About 30 seconds.
Place cooked oatmeal in a bowl. Top with pecans, remaining apple, peanut butter.
You can make multiple servings ahead for the week. Store in refrigerator for 4-6 days
