Apple Recipes That Are Healthy & Easy!

Have you gone apple picking and now have a bowl of apples on the counter like me and looking for some healthy, easy apple recipes? Check out these 5 apple recipes I made this week! It was fun to create more savory dinners with the apples rather than making 15 apple crisps!

Roasted Butternut Squash and Apple Soup

I LOVE butternut squash soup. Adding the apples and topping with bacon and pumpkin seeds was delicious! I kept it dairy free using coconut milk, but you can always sub whole milk or cream if that’s your jam. The leftovers were even better than the first night! I added in some of the caramelized onions leftover from the pizza below and it was SO GOOD!

Butternut Squash and Apple Soup

Ingredients
  

  • 20 oz butternut squash cubed
  • 2 McIntosh apples peeled and diced
  • 1 onion halved and cut into wedges
  • 4 cloved garlic
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp coconut oil
  • 2 cups chicken stock
  • 5 oz coconut milk canned, full fat
  • 4 slices bacon

Optional Toppings: crumbled bacon, pumpkin seeds, additional diced apple

    Instructions
     

    • Preheat oven to 425°
    • Toss squash, onion and garlic tossed in oil and S&P. Roast at 425° for 35 minutes.
    • Cook bacon in Dutch oven. Remove bacon, set aside.
    • Transfer roasted items into bacon fat, add apples and chicken broth. Simmer 15 minutes. Blend with an immersion blenders until smooth.
    • Stir in coconut milk. Pour into bowls and top with bacon and pumpkin seeds.

    Apple, Goat Cheese, Prosciutto and Caramelized Onion Pizza

    We make A LOT of grilled pizzas so I couldn’t make apples recipes and not include a pizza! They are fast and easy to personalize if you have picky eaters like my daughter who will not stray away from plain ‘ol cheese pizza.

    Apple, Goat Cheese, Prosciutto and Caramelized Onion Pizza

    Ingredients
      

    • 1 pizza dough fresh or premade
    • 1 Honey crisp apple thinly sliced
    • 1/4 cup caramelized onions cook 1 thinly sliced onion in butter on low heat until soft and caramelized
    • 2 oz goat cheese
    • 3 slices prosciutto chopped
    • 1 tbsp rosemary fresh
    • 1 tbsp olive oil extra virgin
    • salt and freshly ground pepper

    Optional: sprinkle with crushed red pepper or hot sauce

      Instructions
       

      • Preheat grill
      • Brush pizza crust with the EVOO, sprinkle salt and pepper
      • Top with the remaining ingredients
      • Grill until the pizza dough is cooked through.
      • If using fresh pizza dough, pre-cook ½ way, then put on the toppings.

      Sausage, Potato, Apple and Veggies Sheet Pan Dinner

      Sheet pan dinners are another favorite for weeknight dinners. I love how simple they are to assemble and the quick clean up is the best! I separated the sweet potatoes from the white potatoes for my husband (insert eye roll here). Of all the apple recipes this was the kids favorite!

      Ingredients
        

      • 20 oz sweet Italian turkey sausage or sweet Italian pork sausage
      • 2 cups Brussels sprouts quartered
      • 1 sweet potato peeled and cubed
      • 1 Idaho potato peeled and cubed
      • 1/2 red onion diced
      • 3 cloves garlic peeled and halved
      • 1/4 cup olive oil extra virgin
      • 2 Honey crisp apples peeled and diced
      • 1 tbsp rosemary fresh
      • 1 tbsp sage fresh
      • 1/2 tbsp thyme fresh
      • salt and fresh ground pepper

      Instructions
       

      • Preheat oven to 400°
      • Place sausages, potatoes, Brussels sprouts, onions, apples, and garlic on lined sheet pan.
      • Toss with EVOO, S&P, thyme, sage, and rosemary.
      • Roast in the oven for 30 minutes, tossing halfway.

      Grilled Chicken with Apples, Arugula and Couscous

      I am usually grilled chicken out by this time of year. But using chicken thighs vs breast keeps it moist. And all of the toppings make is like a fall party! And as my husband said, you could literally put this dressing on anything and everything! Simple and with ingredients you probably already have in your pantry!

      Ingredients
        

      • 2 tbsp apple cider vinegar
      • 2 tbsp maple syrup
      • 1/2 cup olive oil extra virgin
      • 1/2 lemon juice
      • 2 cups arugula
      • 8 chicken thighs boneless, skinless
      • 2 Honey crisp or Fuji apples cored and sliced
      • 1 1/3 cups couscous tri-color Israeli
      • 1 jalapeno thinly sliced
      • 2 tbsp parsley fresh for garnish

      Instructions
       

      • Preheat grill
      • Make dressing: Whisk together apples cider vinegar, maple syrup,EVOO and S&P.
      • Season chicken with S&P and grill until cooked to >165°
      • Grill apple sliced for 3-4 minutes
      • While chicken and apples are cooking, prepare couscous according to package instructions
      • Place couscous on plate, top with arugula, jalapeño, chicken and apples. Drizzle with dressing. Garnish with parsley.

      Spiced Apple and Peanut Butter Oatmeal

      I made one sweet breakfast apple recipe! Oatmeal is a great breakfast you make easily one serving or make a few for the week!

      Spiced Apple and Peanut Butter Oatmeal

      Ingredients
        

      • 1/2 cup oats quick cook
      • 1 cup water
      • 1/2 Honey crisp apple peeled and diced
      • pinch of salt
      • 1/2 tsp apple pie spice (cinnamon, nutmeg, allspice)
      • 1 tbsp peanut butter slightly melted
      • 1 tbsp pecans chopped

      Optional: add in ½ tbsp ground flaxseed, drizzle with maple syrup or agave

        Instructions
         

        • Boil water. Add in oats, apples (reserve a few for topping),salt, apple pie spice. Cook 1 minute stirring occasionally.
        • Melt peanut butter in microwave. About 30 seconds.
        • Place cooked oatmeal in a bowl. Top with pecans, remaining apple, peanut butter.
        • You can make multiple servings ahead for the week. Store in refrigerator for 4-6 days
